Good morning, afternoon, evening, wherever you are! I'm here in Pennsylvania and its cloudy, cold, rainy and just miserable. But, its weather and we can't change that, can we?
Anyways, I've been off work now for almost 3 weeks now! First off, my client went into a nursing home and so I had to wait to be assigned a new client. My agency didn't have anyone, okay, fine, I'll wait. Second, my husband got Covid! BLAH!! We are both fully vaccinated and he still got it and he got it pretty badly. No hospital stays, thank goodness, but it was a tough time. He's finally feeling better and back to work and here I sit at home still not working. At least I've had more time to cook and bake!!
So, I've made 2 different types of breads. One is called kobz, its a Moroccan bread (my husband is originally from Morocco). Second one is called batbout, another Moroccan recipe. Both are delicious, but I like the batbout better, its a pita type bread that's very light and fluffy. The kobz bread is a flat, round and more heavy bread that's soft inside and a bit crunchy outside. I've been trying to perfect these recipes and I think I've finally got them down to a science!
Next up, I made chicken tagine, another Moroccan dish. It had chicken, potato, onion, peas, carrots and a few spices. Delicious, better than I thought it would turn out because I wasn't smelling it cooking. Then again my nose is so dry and stuffed up from the heat being on and my allergies not wanting to leave me that I couldn't smell a skunk sitting next to me!! LOL.... Then I made a Moroccan soup called harira, which is a tomato base with spices, lentils, pasta, garbanzo beans and if you'd like to add beef, chicken, lamb you can but I didn't this time, I just used extra bouillon cubes for flavor. Good soup, it makes your nose run from the black pepper but we enjoy it quite a bit.
Other than that I've made the normal dinners of chicken with vegetables, fried vegetables, fish, shrimp and all that good stuff. Tonight it will be chicken stir fry with rice, YUM!!
